Lavender Shortbread Cookies.

I have made these and they were a huge hit.

1 1/2 c. butter softened
1/3 c Blue Agave
1/4 c sifted  confectioners' sugar
5-10 drops Y.L. Lavender essential oil
2 Tbsp. finely chopped freah Lavender (optional)
1 Tbsp. chopped fresh mint leaves
1 tsp. grated lemon zest
2 1/2 c. all purpose flour
1/2 c. cornstarch
1/4 tsp. salt

Directions
In a medium bowl, cream the butter, agave, and confectioners' sugar until light and fluffy. Mix in the Lavender essential oil, lavender, mint, and lemon zest. Combine the flour , cornstarch, and salt, mix into batter until well blended.  Divide dough into two balls,wrap in plastic wrap, and flatten to about 1 inch thick. Refrigerate until firm about  1 hour.
Preheat oven to 325 degrees F (165 degrees C). On a lightly floured surface roll the dough out to 1/4 thickness.Cut into shapes with a cookie cutter. Place on cookie sheets.
Bake 18-20 minuts till cookies begin to brown at the edges. Cool on baking sheets then transfer to wire racks to cool completely
